The Wine: The grapes are sourced from organic and biodynamic vineyards in the Languedoc region, near the city of Montpellier. Unlike most wines produced today, just like in the past, exclusively the wild yeast from the grape is used for the alcoholic fermentation. The wild yeast starts a spontaneous fermentation process that places great demands on the winemaker. Following the alcohol fermentation, the wine is matured in concrete tanks and undergoes a very light filtration before bottling. Just a small amount of sulphur, which is found naturally in wine, is added to prevent the wine from oxidizing.

This wine is a so called natural wine.

Taste and food pairing: A dry and tasty wine with aromas and flavors of citrus, apricot, pear and mineral. Serve the wine with tasty seafood dishes, Asian food or a grilled veal tenderloin with lukewarm potato salad.

Serve at 8-10°C.
