The Wine: The grapes are sourced from organic and biodynamic vineyards in the Languedoc region, near the city of Montpellier. Unlike most wines produced today, natural wild yeast from the grape is used for the alcoholic fermentation – just like in the past. The wild yeast starts a spontaneous fermentation process that places great demands on the winemaker.

Following the alcoholic fermentation, the wine is matured in concrete tanks and undergoes a very light filtration before bottling. Just a small amount of sulphur, which is found naturally in wine, is added to prevent the wine from oxidizing.

This wine is a so-called natural wine, where human impact is minimized in favor of natural processes.

Taste and food pairing: A generous wine with full fruit flavors. Notes of dark plums, blackberries, dark chocolate, thyme, mineral and a light smokiness treat the palate. Well balanced tannins and acidity lead to a pleasant and long finish. A wine that goes well with food, such as meat dishes, cheese and vegetarian dishes with character. Try the wine with a classic boeuf bourguignon.

Serve at 16-18°C.
