The Wine: Hand-harvested organically and biodynamically grown grapes. Exclusively, wild yeast from the grapes has been used in the process. Just a small amount of sulphur is added prior to bottling, the majority of the sulphur is naturally 'added' from the vinification. The wine has been stored for four months on oak barrels before undergoing a light filtration before bottling, all in order to maintain the wine's original character.
The producer is one of Italy's leading biodynamic producers and the wine goes under the category of “natural wine.” The wine is demeter-certified, one of Europe's most strict biodynamic certifications. The wine is also vegan friendly.
Taste and food pairing: The bouquet is intense with hints of sun-drenched dark cherries and blackberries combined with spices and oak. The taste is fruity, long and balanced with a long aftertaste.
Serve at 16-18 °C with rich meat dishes, pasta or a homemade pizza with vegetarian topping.
