The Wine: The wine consists mainly of the Verdejo grape variety, with a smaller proportion of Sauvignon Blanc. The grapes are harvested in Palacio de Bornos' own vineyards in the villages of Pollos and La Seca, just outside Valladolid, in the Rueda district. The vineyards are about 20 years old, and are located at an altitude of 750 m above sea level. In total, the producer has over 308 hectares of vineyards in the area.
The harvest started in early September, and the grapes were harvested at night to maintain fruit and freshness in the wine. After alcoholic fermentation in stainless steel tanks, the wine was stored for about 3 months on its lees. Palacio de Bornos was founded in 1976. Today wines are produced in several areas in northern Spain in addition to Rueda, such as Ribera del Duero, Navarra, Rioja and Toro. The producer has a developed environmental mindset and is certified "Wineries for Climate Protection", which is a Spanish certification that takes a holistic approach to sustainability throughout production.
Taste and food pairing: The wine is very fruity and fresh with hints of citrus, pear and herbs with a dry and fresh finish. Serve the wine with a varied buffet, seafood, grilled fish, vegetarian dishes or with grilled chicken with Caesar salad. Serve at 8 - 10° C.
